North of Napoli, the pizza usually just isn’t the same. In lots of restaurants in Florence the pizza has a thin, crispy crust. Don’t get me wrong, I’ve had some great pizza like this in Florence, but sometimes you’re just looking for thick fluffy bread covered in Mozzarella (and throw on some capers and anchovies for good measure!)
Gusta Pizza is one of the best pizza places in Florence. It has that fluffy thick crust, is cooked in a wood-fired stone oven, and they definitely do not go easy on the cheese. Word has gotten around and caused quite a line out the door, but somehow the staff stays calm and friendly – which if you’re familiar with restaurant staff in Florence, isn’t always a given.
You’ll wait in a line made up of equal parts locals, students and savvy tourists and choose from a short list of classic pizzas (think Margherita, Napoli and Calabrese), priced from €5 to €10. Be prepared to get cozy with other pizza-lovers on the round tables, or take your pizza to go and hang out with the hipsters and pigeons on the steps of Santo Spirito.
